The quality of finished product and stability of operations were deciding factors.

The shelf-life can be extended multiple times compared to that of conventional (refrigerated) products and high quality can be maintained. Moreover, there are certain instances where ingredients of products could be changed to better ones. (This has not been confirmed using definitive tests and is more of an impression)
